Yummy Cookies

Food that is good and good for you can be scarce at times. Part of the key to our overall well-being is eating properly. It is part of our being healthy…body, soul, and spirit. I found a really good recipe for cookies that are just in time for fall. These cookies are yummy and soft…try them warm. Also, these cookies are suitable for vegans as there are no animal products in the recipe. Try them and let me know how you liked them.

Vegan Pumpkin Oatmeal Cookies

2 cups all-purpose flour
1 1/3 cups rolled oats
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 2/3 cups sugar
2/3 cup canola oil
2 tablespoons molasses
1 cup canned pumpkin or cooked pureed pumpkin (do not use pumpkin pie mix)
1 teaspoon vanilla extract
1 tablespoon ground flaxseed (optional)
1 cup finely chopped walnuts (or pecans or remove nuts)
1/2 cup raisins (or try golden raisins or dried cranberries)

Preheat oven to 350 degrees

Mix flour, oats, salt, baking soda, cinnamon and nutmeg.

In a separate bowl, mix together the sugar, oil, molasses, pumpkin, vanilla, and flaxseed. Add the dry in 3 batches, folding to combine. Fold in the nuts and raisins or cranberries.

Drop by tablespoon onto prepared cookie sheet an inch apart. Flatten the tops with a fork or your fingers.

Bake 16 minutes.

Remove from oven and cool on cookie sheets for 2 minutes, then transfer to a cooling rack. Allow to cool and set. Makes 4 dozen.
